Ancho chillies are dried poblano peppers, a staple of Mexican and Southwestern U.S. cooking. They have a deep red colour and a wrinkled skin, and a sweet, smoky flavour with a hint of raisin. Their heat is mild to medium. Soak them in warm water to rehydrate, then blend into sauces, moles, stews and marinades, or toast and grind them into a rich chilli powder.
